Candy making 101

Candy Wafer Storage and Shelf Life

Using jars or clear plastic bags is a great way to properly store and keep track of your wafers.

Tips for Storage

Frequently, people tell us that they store candy wafers in their refrigerator or freezer – be warned, this is a major no-no in the candy making world. Freezers and refrigerators hold a lot of moisture and that moisture will be absorbed by your candy. Always store candy wafers in cool, dry places, and in a container that is airtight. Plastic bags, food storage containers, and glass jars will all do the trick. The cupboard is a safe place where wafers will not be exposed to too much heat, light, or moisture.

We recommend labeling the containers with the date the product was purchased. For previously melted candy, make note of how many times the product has been melted. Also note if the candy has been in contact with allergens such as peanuts or tree nuts during previous uses. Candy wafers can be produced or packaged on shared equipment, so check the packaging of your wafers for specific allergen information.

One final note: candy wafers are notorious for absorbing smells from near-by items. Storing candy in a cupboard near potent spices, or in a house where there are smokers, can make for a unique tasting candy product (if you know what we mean).

Candy Wafer Shelf Life

The ingredients in candy wafers will not “go bad” in the first year of storage; however, the workability may change. After one year, candy wafers will usually have fat bloom, requiring them to be thinned out when melting. To eliminate such problems, purchase candy wafers as you need them. Also, ask questions when making purchases to find out how recently the product arrived at the store.
